Blast prawn mixed greens

Fixings
140g level rice noodles
3 tbsp crunchy nutty spread
4 tbsp half-fat coconut milk
3 tbsp sweet stew sauce
3 spring onions, cut
1 cucumber, peeled, split lengthways, deseeded and cut
300g pack beansprouts
200g pack cooked peeled prawns
Strategy
Cook the noodles after pack directions, then wash under frosty water and empty altogether. In a little pan dissolve together the peanut spread, coconut milk, sweet bean stew sauce and a large portion of the spring onions, including 1-2 tbsp of water to slacken the mixture to a showering consistency.
Blend the noodles, cucumber and beansprouts in a serving dish. Top with the prawns, sprinkle over the shelled nut sauce and dissipate over the staying spring onions.
